Recipe
This week, my husband has requested salmon bowls for lunch, so I made some ready-to-go meals that will keep us full and energized for our busy work schedules.
Ingredients
5 portions of weighed salmon -5 oz
Asian sesame dressing - 2-4 tbsps
Garlic powder- to taste
Onion powder- to taste
Salt & pepper- to taste
Low sodium soy sauce - 1tbsp
Two heads of broccoli
Jasmine rice
Instructions
I began by cutting and weighing the salmon into 5 oz. portions, put the salmon in a bowl with the sesame mix, soy sauce, and seasonings. Mix well and set to the side while you prep your other ingredients.
Next, cut up the broccoli however you want. I just pulled them apart into small trees and steamed them in a pan.
In another saucepan, I cooked jasmine rice. I do not measure typically, but with rice you want to make sure you are following the exact instructions on the back of the bag.
Now that your salmon has been marinating for a bit, preheat your oven to 400 degrees. Bake for 20 mins or until salmon reaches a temperature of 130-145 degrees.
That is it! Now portion out the food into meal prep containers and store in the fridge until ready to eat.
I assembled the bowls with 1 cup of rice, 1 piece of cooked salmon and 1 cup of broccoli.
